Baked Quinoa Pudding

This warm pudding is a satisfying dessert that’s made with the goodness of whole grain quinoa, and Lactantia® Lactose Free 2% Milk, and Lactantia® Lactose Free 35% Whipping Cream. A dollop of fresh whipped cream adds the perfect finishing touch.

Serves: 6 - 8 Preparation: 20 mins Cook Time: 60 mins



  1. Preheat the oven to 325°F.
  2. In a large bowl, whisk together the eggs, honey, sugar, salt, Lactantia® Lactose Free Milk and Lactantia® Lactose Free 35% Whipping Cream.
  3. Add the banana, the rum, the quinoa, and mix well.
  4. Spray a 7” x 11” pan with cooking spray, then fill with the quinoa mixture.
  5. Place the baking dish inside a larger baking dish or roasting pan. Fill the larger dish halfway with hot water.
  6. Bake in the oven for 1 hour until the center is set. Remove from oven and let cool for 20 minutes before serving.


If you prefer to use an 8x8 pan, adjust cooking time to 90 minutes.
